I don't know what everyone else feels about granola breakfast cereals, but I bought a gluten free buckwheat toasted muesli and found that it wasn't quite to my taste - however, rather than leave it at the back of the cupboard to go out of date and finally end up in landfill, I thought I'd give making breakfast bars a go instead... this is my Granola Flapjack recipe - and it's deeeeeelicious!
100g butter
50g demerara sugar
2 tablespoons golden syrup
150g pure oat GF fruit muesli (you can of course use plain pure GF oats)
1oz GF plain flour
75g GF buckwheat toasted muesli (or GF granola of your choice)
50g mixed fruit optional extra - I used whole dried Tart Montmorency Cherries in my recipe
Line your baking tin with greaseproof paper, so it's easier to release your flapjacks from the tin after cooking.
melt your butter, sugar and syrup together over a low heat until all the sugar is dissolved
In a separate bowl, mix all your dry ingredients together and then pour on the syrupy mixture
Press into your prepared tin and mark into bars with a knife (it's much easier to do this before you cook it, as it can be a little tricky once it's cooked and cooled)
Bake in the oven for 15-20 minutes at 180ºc, Gas mark 4 until golden brown
Leave to cool before removing them from the tin.
If you want to be really decadent, drizzle the bars with melted chocolate once they're cut into your desired portions and pop them in the fridge to set the chocolate.
